Each product must be evaluated through a process from raw materials to finished product to determine monitoring activities and action plans for each critical control point. Prerequisites programs for attaining a safe food process must be in place before a proper HACCP plan can be implemented. The consultants of Harold Wainess & Associates have worked with many food processors to improve prerequisite programs and to develop and implement proper HACCP plans.
